PROTECTED GEOGRAPHICAL INDICATION

An extra virgin olive oils produced in Calabria, a region in the South of Italy, according to CALABRIA PGI production standards that certify its provenance.

Extra virgin olive oil obtained by olives  cultivated, picked and processed in Calabria.

Production area:  Calabria Region, Protected Geographical Indication area.
Crop season: October – December;
Olive varieties: essentially Carolea, Dolce di Rossano, Ottobratica, Grossa di Gerace, Sinipolese, Tondina according to CALABRIA PGI production specification;
Pressing: mechanical crusher;
Extraction: by cold extraction (T<27°C).

Aspect: clear;
Colour: light green with golden notes;
Aroma: fruity with green grass and artichoke notes;
Flavour: fruity with  light spicy and bitter sensation;
Acidity: : below 0,5% (CALABRIA  PGI production specification limit 0,5%).

Use: it is ideal for dressing raw fish and meat and as ingredient for cookies and cakes recepies (in place of butter).
