PROTECTED GEOGRAPHICAL INDICATION

An extra virgin olive oils produced in Sicily, a island in the South of Italy, according to SICILIA PGI production standards that certify its provenance.

Extra virgin olive oil obtained by olives  cultivated, picked and processed in Sicily. Packed in Sicily.

Production area:  Sicily region, Protected Geographical Indication area.
Crop season: September – December;
Olive varieties: essentially Biancolilla, Cerasuola, Nocellara del Belice, Nocellara etnea, Nocellara messinese,  Ogliarola messinese according to SICILIA PGI production specification;
Pressing: mechanical crusher;
Extraction: by cold extraction (T<27°C).

Aspect: clear;
Colour: green with yellow straw hues;
Aroma: fruity with almonds, green tomatoes and artichokes notes;
Flavour: fruity and sweet taste, with a light and lovely spicy sensation;
Acidity: below 0,5% (SICILIA PGI production specification limit 0,5%).

Use: it’s a marvelous seasoning for your Mediterranean recipes, especially for the typical Sicilian dishes as roasted fish and tomato sauces.
